Lactobacillus and other lactic acid bacteria (LAB) are responsible for converting milk into curd.
1.LAB grow in milk and produce lactic acid during their growth. This acid coagulates and partially digests milk proteins, transforming milk into curd.
2.A small amount of curd added to fresh milk acts as an inoculum or starter, containing millions of LAB. At suitable temperatures, these bacteria multiply and convert the milk into curd.
